The low market value of whole coconuts and the dependence on externally supplied cooking oil highlight the need for coconut product downstream processing. This study aims to design and develop an integrated coconut oil processing unit to enhance the added value of local resources. The Engineering System Design approach was applied, including requirement identification, conceptual design, and structural analysis using SolidWorks. The developed unit consists of a 200 W electric grater, a 43 L stainless steel (SS304) heating vessel, and a mechanical stirring system driven by a 250 W motor coupled with a WPX 50-A gearbox, mounted on a steel frame (960 × 700 × 1130 mm). Structural simulation indicates a maximum stress of 19.4 MPa, well below the material yield strength (203.9 MPa), with a safety factor of 2.0, confirming structural reliability. Functional testing demonstrates that the system processes 3 L of coconut milk within 45 min, yielding 1.3 L of coconut oil. The proposed system shows strong potential to improve
local food self-sufficiency and enhance the economic value of coconut based products.
